Bordeaux is synonymous with wines, who are more often than not more famous than the city itself. Wine making is the backbone of the local economy and agricultural sector, and for a good reason – Bordeaux's vineyards are active year-round. The season begins in October with meticulous plowing, followed by pruning throughout the winter months to ensure the highest-quality harvest. Spring marks the reawakening of the vines, with fresh buds and leaves. However, it is during late spring and summer that generations of knowledge truly shine. Winegrowers carefully select the branches that will yield quality grapes, employing a ""green harvest"" to remove unripe fruit, ensuring the remaining crop's excellence. The grapes are meticulously tested to pinpoint the perfect moment for harvest. When the fruit reaches its peak ripeness, it is plucked, crushed, and further processed until it becomes a Bordeaux wine. Despite being predominantly associated with wine-making, the Aquitaine region (home to the city of Bordeaux) boasts a diverse agriculture landscape. The region employs 82,000 people, who grow maize, carrot, strawberries, prunes, plums. It’s ranked first in France for farming production, but that’s not all. Aquitaine is also known for the production of several internationally renowned food delicacies - foie gras and oysters. In fact, the region is ranked the fourth largest in oyster production nationwide. The general trajectory of the region is moving towards responsible and sustainable farming. In 2019, Aquitaine’s Regional Council signed the Neo Terra charter, which is an actionable roadmap towards the sector’s ecological transition. The main goal set for 2030 is to have 80% of all farms (regardless of production) be certified either organic or High Environmental Value (HVE).
