In 2022, Milan’s catering industry began a new chapter in its history and it all started with a pact. The mayors of Milan and Florence inked the Charter of Values of Italian Catering, a document aimed at steering the industry towards a more sustainable and locally-rooted future. This isn’t just about the quality of food, but also about striking the balance between preserving cultural heritage and driving economic growth in alignment to current ethical concerns. Restaurateurs, producers, farmers and cities will work hand-in-hand. That’s the vision behind the Charter, which outlines six core values: Economy, Community, Care, Culture, Memory and Environment. In other words, the charter will support local businesses, celebrate culinary traditions, promote responsible sourcing, foster a spirit of community, protect the country’s historical values and also minimize environmental impact. But the Charter isn’t just lofty ideals. It also outlines concrete actions. There are plans outlined for a Festival of Hospitality and the Culture of Italian Catering, showcasing the best of Italy’s culinary offerings. There’s also talk about an Academy for the Culture and Business of Italian Catering, which will nurture the next generation of restaurateurs with the knowledge and passion to carry the torch. Milan boasts over 8750 catering establishments, which generate €3.2 billion in revenue annually. That's a significant chunk of the economy and the Charter aims to ensure its sustainable and responsible growth. Lino Stoppani, president of the Milan Public Business Association, sums it up perfectly: “The Italian restaurant, and the Milanese in particular, expresses great economic, identity, and attraction values. The FIPE Charter of Values intends to promote them by combining food and wine excellence with the values of sociability, conviviality, and tradition.” Milan's catering scene is already renowned for its delectable dishes and vibrant atmosphere. But by embracing local sourcing, sustainability and community spirit, it’s taking its offerings to the next level.
